MATT FRESH (CARDIFF)
I have worked alongside Matt for the past ten years in the various restaurants I have cooked in. Matt & his family are as passionate about fruit and veg as I am about food. Matt only sources only the best fruit and veg available on the market. This really helps & inspires me to create seasonal dishes.
THE BLACK & WHITE PIG COMPANY (BRIDGEND)
THE FARMERS PANTRY (LLANTWIT MAJOR)
These two fantastic butchers have been providing for me over the majority of my career, all meat is the best money can buy. All Welsh, all local (within 100 mile radius), I work closely with these butchers to ensure all of our meat is good enough for our guests and with their knowledge & skill, it always is.
CASTELL HOWELL (CROSS HANDS)
If any supplier is the face of Wales, it is these guys. Everyday, they supply me with their great produce of Wales. We use Castell Howell for Fresh Fish, which in my opinion is the best & I've tried a few. Straight out of the boat, it comes to us after 12 hours of being caught. Hywel, our usual delivery driver works very hard to ensure he arrives by 8:30 every morning sharp, ready for the first cup of coffee and hand milled flower for our daily bread.
